Совершенствование технологии плотного пивоварения путем управления процессом дробного внесения мальтозы в сусло
Диссертация
В результате изучения процесса дробной задачи мальтозы в ходе главного брожения получены зависимости между внесением сахара и характеристиками молодого пива, позволяющие заключить, что управление этим процессом позволяет избежать отрицательно влияющего на состояние дрожжей осмотического стрессапри использовании предлагаемого способа внесения мальтозы степень сбраживания на 5,6% выше, чем при… Читать ещё >
